Spring into Health: a Nutritious Recipe for Diabetes Alert Day

March marks a season of renewal and rejuvenation as we welcome the first signs of spring. It's a time of fresh starts, not just in nature, but also in our commitment to health and well-being. For seniors, particularly those receiving care at home, this month presents a wonderful opportunity to embrace a healthier lifestyle, especially with the observance of American Diabetes Alert Day.

At Right At Home Anne Arundel County, we understand the significance of this day and the importance of dietary management in diabetes care. Hence, we're excited to share a delectable, diabetes-friendly recipe seniors can enjoy this March.

Diabetes-Friendly Spring Vegetable Frittata

A frittata, an Italian egg-based dish, is versatile and easy to prepare, making it perfect for seniors. This recipe is filled with fresh, nutritious vegetables ideal for a light lunch or a delightful dinner. Here's how you can make it:

Ingredients:

  • 6 large eggs
  • 1/4 cup milk (choose a low-fat variety to keep it diabetes-friendly)
  • 1 cup chopped asparagus
  • 1/2 cup diced red bell pepper
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 1/2 teaspoon olive oil
  • Salt and pepper to taste (remember to go easy on the salt!)
  • 1/4 cup crumbled feta cheese (opt for a reduced-fat version)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together eggs and milk until well blended. Stir in the asparagus, bell pepper, green onions, parsley, and garlic.
  3. Heat olive oil in a 10-inch oven-proof skillet over medium heat. Pour in the egg mixture, gently stirring to distribute the vegetables evenly.
  4. Cook without stirring for about 5 minutes or until the edges begin to set.
  5. Sprinkle the top with feta cheese and transfer the skillet to the oven.
  6. Bake for 10-15 minutes or until the frittata sets and the top is lightly golden.
  7. Remove from the oven, let cool for a few minutes, and slice into wedges.

Nutritional Benefits:

This spring vegetable frittata is delicious and packed with beneficial nutrients for diabetes management and overall health. Asparagus is low in carbohydrates and calories but rich in vitamins and fiber. Bell peppers and green onions add flavor and antioxidants, while the eggs provide high-quality protein, essential for maintaining muscle mass in seniors.

Incorporating Health into Everyday Life

Beyond enjoying nutritious meals, we encourage seniors and their caregivers to embrace the spirit of spring by incorporating regular physical activity into their daily routine, staying hydrated, and enjoying the outdoors.

Caregiver cooking for client

As we observe American Diabetes Alert Day, let's renew our commitment to health and wellness. This frittata recipe is a step in the right direction, offering a balanced, tasty option for seniors aiming to manage their diabetes while indulging in the joys of spring cooking.
